I want to replace the 1tb hdd with ssd where I want to install Mac OS, then I will replace the m2 128gb ssd with a larger ssd, where I will install Windows. Will everything work? I can’t see BIOS because the laptop is in assistence and it will come back in 2 weeks. If I disable discrete graphics in BIOS, will it work on Windows? I apologize because I don’t know English very well, so I Mac have made mistakes.

At the moment I have no idea of the wireless model (I remember realtek) because I haven’t the laptop with me

You can Install wireless drivers later but probably if it is Realtek you wouldn't find a kext for it.
Yes you can Hackintosh, the only problem is if you want to dual boot you need to Install an additional hard disk to do it.
HD 630 is supported by Hackintosh. NVIDIA GeForce GTX 1050 is supported by High Sierra, the latest macOS doesn't support it.
Do you have options to disable Discreate Graphics on BIOS? or You might need DSDT Pactches to disable discrete graphics.
You can Install the latest Big Sur.
